Black Bean Sweat Potato Chili from Melissa Costello

‎2 TBL Olive Oil or Coconut Oil
1 Red Pepper Chopped
1 Med Red Onion diced
4 cloves garlic minced
2 tsp sea salt - I use himalayan pink salt healthier for you
1 large Garnet Yam Cut into 1/2" cubes
Zest and juice of 1 lime
1 28oz can of Fire Roasted crushed tomatoes
3 cans black beans or 4 cups freshly cooked - rinse canned beans
1 TBL cumin
1 TBL Chili Powder
1 tsp Cocoa Powder
1 cup Chopped Cilantro for garnish (optional)

In large pot, heat oil over medium heat (use water if you prefer) and saute garlic, onion red pepper, and salt until soft. Add cumin and chili powder. Cook another minute or so. Add sweet potato and lime zest, cooking about 10 mins, stir occassionally. Add the tomatoes, beans, lime juice and cocoa powder. Bring to simmer, cover and cook for 10 mins or until potatoes are soft.

Top with Cilantro and a squeeze of lime or even some diced onions.
